Crispy Chickpeas

A great alternative to pretzels or chips!

These babies are spicy, crunchy, and packed with protein. Great for an appetizer, pick me up snack-in-the-purse, or could even be served as a side dish over rice. Dad ate them with some leftover chutney, but would also be delicious with yogurt sauce.

Here's how easy it is -

Preheat oven to 350.

Mix your favorite spices in a bowl. I used

1/2 tsp of the following: Sweet Paprika, Spicy Paprika, Chili Powder, Cinnamon, Garlic Powder
1/4 tsp of the following: Mustard, Ground Ginger, All Spice, Kosher Salt
+ a dash of ground pepper.

You could also just use salt and pepper, or your favorite pre-mixed spice, like a cajun seasoning.

Coat chickpeas in olive oil. Dress them thoroughly with your spice mix and pop in oven for an hour. Taste one to make sure its crunchy. Still chewy? Put back in oven.

Chickpeas might be the best food ever.
