Spaghetti and Meatless Meat Sauce


So here's the deal about meat - it will invariably make your cholesterol go up and make you feel tired. When most people think about trying vegetarianism, a common question is, "Well what am I going to eat?" or "How will I get enough protein?"

Beans, baby. Beans.

(Try substituting one meal a week that you'd normally have meat - with beans. You can't really taste a difference, and plus, you can eat a bigger portion.)

This meal was basically a whats-left-in-the-pantry-party, but turned out pretty tasty. The result was a three bean spaghetti sauce.

Get out your big pot.

Simmer 1/2 onion, a celery stalk, and some garlic until brown.

In a separate pot prepare your lentils. 1/4 cup lentils to 1/2 cup water, cover and let simmer on low.

To your big pot, throw in some pinto beans and whatever you've got in the freezer. I added a green bean duo from Trader Joe's, but honestly, any vegetable will do. Add 3/4 cup vegetable stock. Add 3/4 cup pre-made pasta sauce. Flavor with oregano, basil, and pepper. For added kick, add chili flakes. Let simmer.

When your lentils have absorbed their water, combine with large pot.

Boil whole wheat pasta. Serve bean sauce ontop.
