Pantry Challenge II: Hilariously Simple Mac & Cheese


Holy Cow, I've discovered why you are laughing!

Laughing Cow Mac & Cheese is amazing. I made this on a whim, and it is now one of my favorite no-cook dinners.

Melt one or two of your favorite Laughing Cow wedges into cooked, slightly wet pasta. (Hey, at 35 calories each, its okay to splurge.)

Help melt it with a few splashes of milk (almond or soy is fine).

Add salt and pepper to taste, and if your milk made your mac a little room temperature, zap in microwave for 15 seconds.

This is decadently creamy and rich, far superior than boxed mac and cheese. Put on top of whole wheat pasta and you've got a healthy alternative to an American standard.
